I found this book at the library and found it incredibly useful. The receipes are easy to follow and the history behind the dish/ingredient is very interesting. I love Japanese food, but I was afraid of learning it, because I thought it would be too complicated to understand procedures. This book took away that fear and gave me more than the receipe. It also 'fed' my culture.
