Challenging & assuring resource for dietary wisdom
This book changed the way I view our dietary requirements more than any other book I've read. The first section is full of nutritional facts which helped me to learn how to view the macronutrients properly: beneficial healthy fats, essential proteins and properly prepared carbohydrates. This book is very helpful for those who suffer from digestive disorders to be able to understand how to eat not just what to eat. It includes so many nourishing recipes and explains how to prepare grains and ferment foods. I love how the dietary wisdom is associated with traditional diets of people who had long lives and healthy bodies. Some recipes are hard to make due to the time and effort involved and the hard to find ingredients they call for, so that is why I give this book 4 stars instead of 5.
