This 1839 work is a most important primary source of our Antebellum social history, in that the author was a responsible southern lady who considered healthful cooking the primary goal of the Kentucky housewife, who also must function as nurse to her entire household, including family members and all employees in her household and under her care. The recipes include medicines as well as preventives, and Mrs. Bryan understood fully the best cooking temperatures as well as many of the chemical combinations for cures as they were understood at the time. She covers cooking methods and temperatures for all foods, including "beaten biscuits," a favorite biscuit throughout the south, while considering it herself to be very unhealthy eating. Essential reading for any social historian.
