Errr, Well..., there are a lot of recipes and admonishments herein from one of the uber famous chefs. IMO just a bit too demanding in the "one must this, and one must that". Not to say there are not good or even brilliant things here, there are many. But its just too prima dona for a home cook that enjoys good food, loves experimenting, and hates being confined by rules. I enjoyed early works of Robuchon, this one not so much. Perhaps color me one of the unwashed masses..., but still and all, I know my onions.
