Including Mexican-based food. Well written and well researched Good stuff and worth reading. I lived and learned in Tucson for a spell, and my taste is much influenced by Sonoran styles. Pilcher isn't much interested in that, so the book didn't fit my prejudice and was thus a little bit disappointing, but that was my fault, not Pilcher's.
