This book is anything but a dutifully authentic documentation of Moroccan home cooking. The great classics are all here--the basteeya, the couscous, the preserved lemons, and much more. But Lahlou adapts them in stunningly creative ways that take a Moroccan idea to a whole new place.

This is a beautiful book. The most useful chapters for me are the ones on stocking the pantry; his spice blends, sauces, olive oil selections, etc. I find too many of the actual recipes not appropriate for home cooking as too many ingredients are required. That they aren't used enough throughout the book makes purchasing them a wasteful and unnecessary extravagance to my mind. His writing style and stories are friendly and interesting. His harissa is the best I've come across- beating out my old favorites by Wolfert and Ottolenghi.
