This book is out of print, but it contains many classic European cakes and pastry recipes. Very well illustrated with some step by step instructions and photos. If you don't enjoy this type of pastry, then this book may not be suitable for you.
This is the European Edition with proportions in metric weights and volume. If you are not accustomed to weighing your ingredients, then you need to look for the American edition , Cakes & Pastries, which has proportions in cups.
These recipes are from the 1980s - thirty years ago and in that time some ingredients have changed. There are many varieties of eggs available now due to the different feeds the chickens receive. You need to experiment to verify that the eggs you use produce good results and switch suppliers to see if there is a noticeable difference.
Quality of chocolate has changed. The traditional brands have lowered the quality to keep prices affordable. Recipes that call for melted chocolate need high quality chocolate that contains cocoa butter. Lower priced chocolate have substituted other fats. You need to get the best ingredients for many recipes to be successful.
