Ms. Lee, who, herself, is not Asian, makes Chinese cooking accessible to the everyone. She writes easy to follow, methodical, step-by-step instructions in this cookbook, with delicious results. While she encourages the use of authentic Asian ingredients, she follows each recipe with suggestions for substitutions should you not be able to find certain ingredients. She is also not shy about making specific brand recommendations. Even though I purchased this book, originally published in 1976, in the year 2007, I find this book to be one of the better Chinese cookbooks published in the interim 30 years!
