Having only ever butchered small animals like chickens and rabbits, I turned to this book for help with some lambs I raised for meat. Unfortunately, the text fell far short of useful. It reads as if it never saw an editor: it is replete with typos and misspellings. The author repeats himself in some places, and leaves out steps in other places. He frequently uses different terms to refer to the same body part, without ever offering a glossary or complete diagram. We spent more time trying to decipher the incoherent instructions than we did actually dispatching the lambs. I do not recommend this book.
