When Bill Collison was 22 he turned a shed in Lewes, East Sussex, into a small greengrocer's. After a few years the shed had moved to Lewes High Street, and became the award-winning Bill's Produce Store and Cafe. Sensing a hole in the market, Bill began to open cafes in other South-Eastern locations, starting with Brighton and moving on to Reading, Cambridge and Covent Garden.
