I know, I know. You've just become a veggie and you want a REAL cookbook, not just one more entry in a giant series of books that also teaches beekeeping and computer programming. But you have to start somewhere! This book helped me a lot when I was a new vegetarian, because not only was I new to vegetarianism, I was fairly new to cooking, period. Sure, I took Foods class in high school, but that revolved around meat dishes. I was starting my sophomore year of college, and being off campus, I didn't rely heavily on the meal plans offered at my university. I also had a VERY basic set of kitchen equipment with which to work. "Vegetarian Cooking for Dummies" is ideal for those circumstances, because none of the required equipment is of the overly specialized, "foodies only" variety, and everything is over-explained to help a newbie get his or her bearings. The entire front half of the book is just information, laid out very clearly and readably. Topics range from learning to scan ingredients lists for hidden animal products, stocking one's pantry, adapting recipes, the basics of cooking staple foods such as beans and grains, and super basic cooking 101 stuff that is universal to omnivores and herbivores alike. I'm talking "boiling," "chopping," "washing," etc. And besides that, most of the recipes are really good; I still rely on this book when I meal plan, and I have been a vegetarian now for over six years.
