This is a straightforward little paperback filled with authentic French recipes. No fuss, no glamorous pictures but filled with good information for the cook who takes things seriously. It's appreciated that good accompanying wines are recommended, to complement the meal.

REALLY ESSENTIAL SMALL BOOK
Our old copy of this book was literally so worn out that it was unusable--I was delighted to find it available on alibris and promptly ordered a copy. It contains a large number of very useful recipes without the extremely elaborate and difficult instructions which make a good many books on French cooking rather off-putting. The results are uniformly excellent, with the added benefit that the cook is not an exhausted wreck by the time she serves a meal. I would recommend this book to both beginning and experienced cooks. It is also interestingly written, another plus. Try the Carrots Vichy, the Carbonade, the Croque-Monsieur, the Tomatoes Provencal--I could go on at length.
