Hydrofluoric acid is much used in breweries for disinfecting vats and tanks. It is a powerful germicide. Sulphites.--Sulphites act as antiseptics and also preserve the red color of meats. Sodium sulphite and bisulphite and sulphurous acid are used principally upon fresh meats, where they act as a preservative and as a retainer of color. Sulphur dioxid is also much employed for the bleaching of fruits. Sulphites, even in minute amounts, interfere with the action of ferments, and thus influence digestion. Free sulphurous acid is very irritating. Sodium sulphite is very poisonous when injected subcutaneously or intravenously. Death occurs by paralyi' of respiration. Much larger quantities arc tolerated by the mouth, tin sulphite being slowly absorbed. The greater part is converted to tin' harmless sulphate during and after absorption.
