I am trying to go vegan. I had this book in days gone by when it was first published. It is one of the best. This book is so helpful in making the Seitan. The instructions are clear and concise and enough recipes to get you started. In these days of food shortages and high prices and with animal protein being full of noxious chemicals and hormones I have made a pledge to myself to go vegan. I know that going vegan "cold turkey" is going to throw my system out of whack. So, I am on a plan of weaning myself off of animal products. This book has been so helpful and I highly recommend it to anyone wanting to eat less or no meat products and who also want to save money on their grocery bill. I have already saved the cost of the book.
