I worked w/ Kevin Tubb at the Eldorado Grill while he was compiling this book - the recipes are good.
A really good margarita base (that's not in the book) that was used at the restaruant bar is; 3 Cans of MinuteMaid Lime-Ade, 1 can of water.
Being vegetarian now, the book does have some recipes that accomodate this, just no bacon fat for the collards!
Overall a good book for tex-mex - the 'Texas Torpedos' are not to be missed!
