Very Good. First published in 1885, this is an elegantly written nineteenth-century cookbook. Many of the first few chapters include discussions of dining style, foodways, remarks on American culinary culture, and cooking methods. Many of the recipes are classic Victorian dishes, some more sophisticated than others, but all with careful instructions for preparation. It is obvious that the author was familiar with the best cookbook writers of the day, and she credits a few recipes to Soyer, Gouffé, and Blot, for example. Catherine Owen is the pseudonym of Mrs. Helen Alice (Matthews) Nitsch. Ex-library but with minimal markings: small gift bookplate, small handwritten accession number on p. iii, blindstamp on p. 197, borrowing slip on rear free endpaper. There are no other markings; title page unmarked; no library pocket; no call numbers on spine. Fine green ribbed cloth; gilt cover and spine titles. Light rubbing at corners and spine ends, else very good+; no evidence that the book ever circulated. Bitting, p. 351. Cagle 580. Not in Brown. Scarce. The author appears to be strongly dedicated to quality and detail and views herself as a teacher: "I have tried...to give the best I know of each [recipe], all tested by myself, and to give them so explicitly that they can be easily practised. Where there are many ways of cooking one thing I have given two recipes, one, the finest I know, and one more simple." – p. iii. "Should I succeed in making things that were obscure before [recipes belonging to the domain of a French chef] clear to a few women, I shall be...proud." – p. v.; 8vo; xi, 243 pages.

Good. Book. 8vo-over 7¾-9¾" tall. This appears to be a revised edition of the 1885 original. Book is in plain green cloth covers that are moderately worn at edges and have some small orange stains on the front cover. The book is starting to loosen up, or crack at a few of the folds, but is still a nice tight copy with very clean contents. Previous owner did pencil in purchase info on front end paper. Very nice turn of the century cookbook.
