I had already arrived at a flour blend only slightly different from Ms. Fenster's, but I was happy to switch over to her's when I understood how to make slight changes according to what characteristics I want to emphasize. LOVE the Crunchy Almond cookies!

Best gluten free recipe collection ever
This book was a gift to my GF daughter. She was cooking up a storm with it and freezing what they couldn't eat. I bought it so when she visits I would have some dishes that were proven. Well, it carries some of our traditional Scandinavian holiday recipes, other ethnic groups too. It is easy to read, light weight for it's size, no colored pictures but chocked full of lovely edible appetizers, cookies, bars, entrees, our favorite being the ravioli so far. The flourless cakes are delicious.We liked the homemade GF ingredients section.We can't just go to the grocery store and pick up an envelope to enhance our entree. Carol Fenster deserves a medal for all the work put into this book. Finally recipes worth eating. We highly recommend this recipe book. Celiac or not!
