Only the freshest local ingredients are used, heavy sauces have been replaced by light sauce reductions that intensify spicy Creole flavors. and nouvelle French and Chinese cooking techniques and Japanese modes of presentation have been adapted. This is the best book to learn authentic New Orleans fine cuisine. Commander's Palace was the first truely gourmet restaurant I remember hearing about as a young chef. I was finally able to visit in March of 2003. This cookbook will remind me of that visit forever. Recipes are easy to follow, delicious and present great for company. The old favorites are there, especially Bread Pudding Souffle, the lightest bread pudding you'll ever taste. Enjoy, and Bon Appetit!
