To my way of thinking, James Beard's American Cookery is not only a classic of the cookbook genre it is indispensable for every kitchen in the land. It is the cookbook I go to first every time I start a new project in the kitchen. James Beard himself was a food historian as well as a master chef and both disciplines are evident in the cookbook. Several of the recipes in the book serve as my master recipes; his recipe for cornbread, for example, it is simply divine. (I grew up in Southern Indiana and I know cornbread!)
