El autor se remonta a los origenes historicos de nuestra gastronomia -las culturas indigenas, la influencia de Peru y Bolivia, las costumbres de los gauchos-; analiza herencias, prestamos y adaptaciones de las cocinas espanola e italiana y la permanente admiracion por Francia; senala las creaciones autenticas y las comidas tipicas; da por tierra con algunos mitos, y traza un panorama de la actualidad, donde el auge de lo etnico y la importancia creciente de la industria vitivinicola convive con las cocinas regionales y la moda del fast-food. [...] Otra palabra muy argentina, pero que parece confundir a la mayoria de la gente, es churrasco. Gran parte de las definiciones que he podido recopilar se refieren a este bocado como "carne asada." Diego Santillan en La Gran Enciclopedia Argentina define al churrasco como "carne sin hueso," lo que es correcto, pero luego arruina todo agregando "asada sobre las brasas o cenizas calientes." Como se procede a asar sobre cenizas no es aclarado por el sesudo lexicografo. Sera acaso una forma de preparar la carne netamente nuestra que hemos dejar pasar al olvido? Otro eslabon de una potencial cocina autoctona desperdiciada? [...] Curiosamente, el asado no es nuestra comida mas popular. Segun las estadisticas de ventas, lo que mas comemos los argentinos es carne picada. El bife ha sido sustituido por la hamburguesa.
